The truth about Passover cakes is that — well, they’re usually not very pretty. When you replace versatile white flour with anything — be it millet flour or matzoh meal — you can run into some, er, textural issues with your baked goods. They come out dry, heavy, and have funny aftertastes.
The best approach to leavening-free desserts involves focusing on favorites (like matzoh crunch) that never contained any flour to begin with! And it is from a non-Passover source that my recipe for walnut cake takes inspiration.
When you make walnut cake, you don’t have to substitute any weird flour mixes or alter any proportions. All you do is beat several eggs — yolks and whites separately — and throw in a couple cups of sugar and loads of ground, toasted nuts. The cake that emerges from the oven is not dry, it’s not heavy, and it doesn’t have a funny aftertaste.
The chocolate whipped cream I pile on top could honestly disguise any weird Passover cake. Fortunately, it doesn’t have to prove itself — it’s just a rich and decadent extra that makes the nutty dessert that much more worthy of your post-brisket stomach space.
Walnut Passover Cake with Chocolate Whipped Cream
Makes one 9-inch cake.
If you make this with the cream, it isn’t parve, but I don’t know if you care. And I’ve heard that kosher cream of tartar exists. If you don’t find that, just omit it altogether and be extra careful not to overbeat the whites.
Ingredients
For the cake:
2 ¾ cups walnuts, toasted
½ cup sugar
¼ cup brown sugar
2 teaspoons cocoa powder
¼ teaspoon salt
7 eggs, separated
¾ teaspoon cream of tartar (optional; if keeping kosher for Passover, you can omit)
For the cream:
½ cup whipped cream
1 tablespoon confectioners sugar, sifted
2 teaspoons good-quality cocoa powder, sifted
Preheat the oven to 350°F. Grease the bottom of a 9-inch round springform cake pan, then cut a circle of parchment paper to fit over the greased bottom. Don’t grease the sides.
Toast the walnuts on a baking sheet for 5-7 minutes, stirring once. They should be fragrant and taste toasty. Let them cool to room temperature, then put them in a food processor with the brown sugar. Grind for just a few pulses, until the nuts are fine but not oily. Set aside.
Put the egg yolks and the 1/2 cup white sugar in a medium mixing bowl and beat them with a handheld mixer for about 5 minutes, until the yolks have lightened in color and are thick and fluffy. Fold the ground walnuts and the cocoa powder into this mixture.
Rinse the beaters really well and dry them thoroughly.
In another mixing bowl, beat the egg whites and cream of tartar if using with the clean beaters until the whites form soft peaks when the whisk is raised.
Add about one-quarter of the egg whites to the walnut-yolk mixture and fold to combine. In three parts, add the remaining egg whites, folding gently but thoroughly. You want the whites to be completely incorporated, with no streaks left.
Pour the batter into the pan and smooth the top. Bake for 20 minutes, or until the cake is springy to the touch and no longer jiggly. Remove from the oven and invert the cake immediately on a lightly greased rack. Let it sit until cool to the touch, about 35 minutes. Run an offset spatula or butter knife around the edges, then loosen the pan and invert the cake onto a baking sheet. Remove the pan bottom and the parchment, and let the cake cool completely.
You can make the cake in advance and wrap it tightly in plastic wrap. Keep it in the refrigerator if you’ve made it more than a few hours in advance.
When ready to serve, make the whipped cream. Combine the cream with the confectioners’ sugar and the cocoa powder. Beat to incorporate the cocoa and continue to beat until the cream is thickened and forms a soft peak when you lift the beater.
Scoop onto the top of the cake and sprinkle with more cocoa powder. You can also serve the cream on the side.

Interesting recipe.... I have to make a dessert for Easter and have ground almond meal from Trader Joes that I could use instead of walnuts.... I just have to figure out what to sub for the cocoa and chocolate (I can't stand chocolate...) I love the idea of a flourless cake, though.

Friday 6th April 2012 Sounds really yummy. I am not familiar with the cooking rules for Passover. An alternative to flour might also be potato starch, which is readily available here in Sweden, where I live. Would that be permitted? Potato starch or even corn starch? Corn starch, Maizena, is availible in the US. Just a thought. Because I already have cake recipes with potato starch or even boiled potatoes. I found this baking cookbook from the early 1940's among my grandmother's things. It was all about rationing and shortages of different staples! How to bake a cake if you didn't have milk or eggs or flour or sugar! There were sunstitutes for everything! There are still reasons to want to be able to find alternatives, and not just during Passover. People who are allergic to gluten and/or milk need to find alternatives. And then there are folks who absolutely cannot eat nuts of any kind. And of course, diabetics who should not eat sugar. I'll make your cake. It sounds great. Best wishes, Tina

Funny, I was just reading that archeologists have found ovens at ancient temple sites around the world, theorizing that honey bread was prepared by temple priests or priestesses and sold to worshippers to offer to the gods they worshipped in that particular temple. Funny how what were once powerful ancient rites have stayed with our collective conscious' evolving through time to passing over unleavened cakes for Easter.. That being said, I can't wait to try this recipe!

Terrific recipe! Just a couple thoughts from someone who has cooked a few of these sorts of cakes for large events: Flour-less chocolate cakes can sometimes have problems with the center falling -- or the edges overcooking, and the center undercooking. The key is to regulate the moisture in your oven. If you try the recipe and that happens, try it again -- but add a casserole dish or some other bakeware-safe container filled with water on a lower rack. (Eg: Put the cake on the middle rack, and put the container with the water on a rack below it.) Also, another fyi: If you do make the cake in advance, be sure to let the cake completely cool before you wrap it in plastic wrap. Otherwise, the cake will get gummy -- and you're running the risk of food bacteria woes.

I was just whipping up this cake that I'm serving for Easter dinner, but alas some steps weren't totally clear. There was no mention in the directions on when to add the salt or cocoa powder (to the cake part). It also wasn't clear which sugar should have been added to the walnuts or to the egg yolks (though I think I managed to figure that out). Anyhow, I left out the cocoa powder and salt from the cake as I wasn't sure if they were intended to be added. The cake is in the oven and I have my fingers crossed that all goes well. For future reference though, can you clarify these points? Or if anyone out there had a similar experience, please let me know what you did. Thanks!

Gigi: You grind the walnuts with the brown sugar (not regular sugar) and then add the cocoa and salt to the egg yolk-sugar mixture when you stir in the ground walnuts. You want to make sure the center is cooked all the way through - there shouldn't be any jiggling. You may need to tack on up to 10 extra minutes to the 20 minuts in the recipe depending on how hot your oven runs.
