These witchy broomstick appetizers are sure to bring a smile to Halloween party-goers’ faces. They’re a snap to assemble, and require only two ingredients to make: shredded phyllo dough and jumbo pretzel rods. Serve them on a tray next to bowls of your favorite savory party dips, or brush them with butter and sprinkle them with cinnamon and sugar for a salty-sweet treat.
Shredded phyllo dough is often labeled as “Kaitafi.” It can be found in the frozen foods section at most well-stocked grocery stores, or you can purchase it at Middle Eastern markets. These brooms can be made up to three days ahead and kept in an air-tight container.
You will need:
- Shredded phyllo dough (also known as Kaitafi)
- Pretzel rods
- Kitchen shears
- Melted butter (optional)
- Cinnamon-sugar (optional)
Step 1: Prep materials
First, allow the Kaitafi to thaw at room temperature for 30 minutes, or according to the directions on the package. While you’re waiting for the dough to thaw, cover two baking sheets with parchment paper and choose 12 pretzel rods that are free of cracks or nicks.
Pick up a section of the shredded phyllo and smooth it so that all of the strands are pointing in the same direction.
Cut a 4-inch piece of phyllo from the end of the dough with a pair of kitchen-dedicated scissors.
Note: It is okay if one end of the phyllo is messy, we’ll give it a “haircut” later.
Step 2: Assemble broomsticks
Wrap the cut end of the phyllo around the end of a pretzel. Press the dough around the pretzel with your fingers about 1 inch down from the cut top, and hold for 10 to 15 seconds, or until the dough strands hold their shape when the pressure is released.
Cut a small, thin section of shredded phyllo and wrap it around the pressed part of the dough. Firmly press the wrapped section in place.
Trim the end of the broom to give it a uniform appearance.
Repeat with the remaining pretzel rods and phyllo, and place them on the parchment-lined baking sheets.
Step 3: Bake broomsticks
Bake the brooms at 400°F for 20 minutes, or until they become crisp and turn golden brown. Allow the brooms to cool on the baking sheet. Serve with your choice of party dips (we opted for nacho cheese and guacamole).
Note: These brooms can be made sweet by brushing the unbaked phyllo with melted butter and sprinkling on cinnamon-sugar. Bake and cool as directed.

Don't want to be a downer amongst all these optimistic comments, but these were a nightmare to make! I don't know if my Kataifi was a little dry, although I tried two different techniques to moisten it in an attempt to make it hold together, but it never really did. I was determined to make them because I ordered the Kataifi online and wanted these for my Halloween party. I ended up making 15, but they did not look quite so neat and tidy because of the struggle to get them to stay together long enough to get them in the oven. Most of my party guests didn't undertake the very messy action of actually eating them. Great looking idea, but I would say definitely not worth the mess and frustration (and I am definitely not an amateur in the kitchen.)

These are adorable and doable, although tricky. Proceed with caution. You will need to keep your kataifi from drying out so cover the part you're now using with wet kitchen towel and only take out as much as you will use in the next 5 minutes. You also will need to moisten the part of the dough that attaches to the stick. Have a cup of water at hand and moisten the insides of the bunch of strands with your finger, then insert the stick and press around, keep pressing for a few seconds as the recipe says. Moisten the pressed part, then wrap a small strand around and press again. Also I would say the baking temperature and time are off, the brooms will burn if you keep then for 20 minutes at 400F (200C). For fan-forced, I baked for 10 minutes at 350C (175C) rotating the sheets once. Keep an eye as it will be a great shame to burn them. It took me about an hour to make 10 brooms, and I'm pretty handy in the kitchen. I will definitely make these again as they are straightforward to make when you work it out and incredibly cute, but mostly as edible decorations (they are messy to eat too). Don't count on making dozens in one go. One more tip: in Australia, you will easily find kataifi in Greek delis, cheap too ($3-4 a bag that could make you at least 150 of these brooms). It was honestly harder to find the sticks - I was lucky to find some in Aldi (not their usual stock but Oktoberfest specials leftovers). Normally Woolies would stock them but I couldn't find any in the two stores I went to.
