Recipe: Black Bean Taco with Chunky Guacamole

Black Bean Taco with Chunky Guacamole

  • Black beans:
  • 2 cups of cooked black beans
  • 1 small onion, roughly diced
  • 1-2 tsp cumin
  • 1 table spoon vegetable/olive oil (for frying)
  • Salt and pepper, to taste
  • 2 cup of sweet corn kernels
  • 1 tablespoon olive oil
  • 1/4 cup chopped cilantro
  • One head of baby cos lettuce, rinsed and chopped roughly
  • 12 corn taco shells
  • Guacamole:
  • 2 small avocado
  • The juice of a small lime
  • 1 small chilli pepper, diced
  • Salt and pepper, to taste
  • Hot sauce (tabasco, cholula, etc)



  • To prepare the black beans, heat olive oil in a pan over medium high heat. Add in chopped onions and the cumin. Stir occasionally and cook for 3-5 minutes until the onions have softened and turn translucent. Add in the black beans and cook further for 5 minutes, stir often. Add in 1/4 cup of water and cover the pan with a lid. Turn heat down to medium low and let it cook for 5-10 minutes, or until beans are soft. Season with salt and pepper and remove from heat.
  • Combine the sweet corn kernels, cilantro and olive oil in a medium bowl and stir to combine. Set aside.
  • To make the chunky guacamole, combine all the ingredients in a small bowl and use a fork to mash and incorporate everything together. Set aside.
  • To assemble the tacos, layer the lettuce on the bottom of the taco shell, and then layer with black bean mixture, corn mixture and top with chunky guacamole. Serve with hot sauce according to taste if desired.
